Chocolate-Peanut Butter Thumbprints

Ingredients

  • Crisco® Original No-Stick Cooking Spray
  • 1 oz. unsweetened baking chocolate
  • 1/2 cup Crisco® All-Vegetable Shortening
  • 1/2 cup sugar
  • 1 tbsp. milk
  • 1/2 tsp. vanilla extract
  • 1 large egg yolk
  • 1 cup all-purpose flour
  • 1/4 tsp. salt
  • 1/3 cup semi-sweet miniature chocolate chips
  • PEANUT BUTTER FILLING
  • 1/3 cup Jif® Creamy Peanut Butter
  • 2 tbsps. butter, softened
  • 1/2 tsp. vanilla extract
  • 1 1/2 cups powdered sugar
  • 1 to 2 tbsps. milk

Directions

  • Step 1

    HEAT oven to 350ºF. Coat baking sheets with no-stick cooking spray.

  • Step 2

    MELT baking chocolate according to package instructions. Cool slightly.

  • Step 3

    BEAT shortening, sugar, milk, vanilla and egg yolk in large bowl with mixer on medium speed until well blended. Beat in melted chocolate. Add flour and salt. Beat until blended. Stir in chocolate chips.

  • Step 4

    SHAPE dough into 30 (1-inch) balls. Place 2 inches apart on prepared baking sheet. Press thumb or index finger into center of each ball to create an indentation.

  • Step 5

    BAKE 8 minutes or until set. Re-shape center indentations, as necessary. Remove from baking sheet to wire rack to cool completely.

  • Step 6

    For Filling, BEAT peanut butter, butter and vanilla in small bowl with mixer on medium speed until blended. Add powdered sugar and 1 tablespoon milk. Beat on low speed until blended. Beat on high speed until fluffy, 2 to 3 minutes. Add additional milk, 1 teaspoon at a time, until filling reaches desired consistency. Spoon or pipe onto center of each cookie.
