Flourless Peanut Butter Cookies

    1 cup Jif® Creamy Peanut Butter

    2/3 cup sugar

    1/4 cup firmly packed light brown sugar

    1 large egg

    1/4 cup plain yellow cornmeal

    1 teaspoon baking powder

    1 teaspoon vanilla extract

    1/4 teaspoon salt


  1. HEAT oven to 325°F. Line baking sheet with parchment paper.
  2. BEAT peanut butter, sugar, brown sugar, egg, cornmeal, baking powder, vanilla and salt in medium bowl with mixer on medium speed until blended.
  3. SHAPE into 1 1/4-inch balls. Place 2 inches apart on prepared baking sheet. Flatten with bottom of drinking glass to 1 3/4-inch diameter, then mark with fork in a criss-cross pattern.
  4. BAKE 9 to 10 minutes or until edges are light golden brown. Cool on baking sheet 5 minutes. Remove to wire rack to cool completely.
