Texas Roll 'Em Up

Ingredients
- 1 flour tortilla (soft taco size)
- 2 tablespoons Jif® Creamy Peanut
- 1 - 8 oz container sour cream
Salsa
- 1 - 11 oz can mexicorn
- 1 - 15 oz can black beans, drained and rinsed
- 1 - 16 oz chunky, chunky salsa sauce (mild or medium)
Guacamole
- 2 medium avocados, skinned and pitted
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Dash of salt
Directions
- Mix mexicorn, black beans, and salsa sauce in a medium bowl, set aside.
- In another medium size bowl, stir until smooth avocados, lemon juice, garlic, and salt, set aside.
- Spread Jif Peanut Butter onto tortilla, spread 1/3 cup salsa sauce onto peanut butter.
- Roll up tortilla. Cut in half.
- Serve with guacamole and sour cream.
- Salsa sauce and guacamole make enough for 9 servings.
