INGREDIENTS:

  • SALAD DRESSING
  • 1 recipe Honey Peanut Dressing
  • BLACK BEAN SALAD
  • 1 (15 oz.) can black beans, rinsed and drained
  • 1 pint grape or cherry tomatoes, halved
  • 1 (11 oz.) can mandarin oranges, drained
  • 1 (12 oz.) bag salad mix with iceberg, romaine, carrots and radishes
  • Prepared chili lime tortilla strips
  • 1/3 cup chopped red onion
  • 2 tablespoons chopped cilantro

DIRECTIONS:

  1. PREPARE Honey Peanut Dressing.
  2. TOSS black beans, tomatoes and oranges together in small bowl. Divide bag of lettuce evenly on 4 salads plates. Divide bean mixture evenly over lettuce. Sprinkle salads with tortilla strips, red onion and cilantro. Drizzle with Honey Peanut Dressing. Serve immediately.
